Veggie Fajitas

I love a Chicken Fajita, but sometimes when time is against you, these Veggie Fajitas are the perfect alternative for a quick and tasty meal.

Ingredients

  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 cups mushrooms, sliced
  • 2 tbsp olive oil
  • plain tortillas
  • 1 tsp chilli powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • sour cream
  • grated cheese
  • lime wedges
  • salt and black pepper

Instructions

  1. In a small bowl, combine all the fajita seasoning ingredients: chilli powder, paprika, cumin, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well to combine.
  2. In a large pan, heat olive oil over medium-high heat and add the sliced bell peppers, red onion, and mushrooms.
  3. Sprinkle the homemade fajita seasoning over the vegetables.
  4. Sauté the vegetables for 5 minutes, stirring occasionally, until they are tender-crisp and slightly caramelised.
  5. While the vegetables are cooking, warm the flour tortillas.
  6. Once the vegetables are cooked, spoon them onto the warmed tortillas and serve the sour cream, grated cheese and lime wedges.
