Turkey Gnocchi Bolognese

Rich and delicious, this Turkey Gnocchi Bolognese is one of my absolute favourites for an easy meal.

Ingredients

  • 500g minced turkey
  • 500g gnocchi
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can chopped tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup chicken or vegetable stock
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp thyme
  • 2 tbsp olive oil
  • fresh parsley or basil, chopped
  • grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions (usually 2-3 minutes until they float). 
  2. In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until softened, about 2 minutes. Add the minced garlic and cook for another minute.
  3. Push the onions to the side of the pan and add another tablespoon of olive oil. Add the minced turkey, breaking it up with a spoon, and cook until browned, about 5 minutes.
  4. Stir in the tomato paste, chopped tomatoes, chicken stock, oregano, basil, thyme, salt, and pepper. Mix well and bring the sauce to a simmer. 
  5. Add the cooked gnocchi to the pan and gently toss them in the Bolognese sauce until they are well coated.
  6. Garnish with fresh parsley or basil and a sprinkle of Parmesan cheese.
