Tomato & Bacon Gnocchi

Ingredients
- 500g potato gnocchi
- 150g bacon, chopped into small pieces
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup fresh cherry tomatoes
- 1 tbsp tomato paste
- 50g Parmesan cheese, grated
- 2 large handfuls of fresh rocket
- fresh basil leaves, for garnish

Instructions
- Heat a large pan over medium heat and add the chopped bacon. Cook until crispy, about 5 minutes. Remove the bacon from the pan and set it aside, leaving the bacon fat in the pan.
- Add the olive oil to the pan with the bacon fat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the cherry tomatoes and tomato paste. Season with salt and pepper.
- Cook for a couple minutes, stirring occasionally, until the tomatoes become softer.
- Meanwhile, bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually 2-3 minutes or until they float to the surface). Drain and add to the pan with the tomato sauce.
- Toss the gnocchi in the tomato sauce until well coated. Stir in the crispy bacon and half of the grated Parmesan cheese.
- Plate the gnocchi and top with fresh rocket. Garnish with the remaining Parmesan cheese and fresh basil leaves.
