Tomato and Mozzarella Bruschetta

Ingredients

  • 4 large ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped, plus extra for garnish
  • 2 cloves garlic, minced
  • 1 tbsp extra virgin olive oil, plus extra for drizzling
  • 1 tsp balsamic vinegar
  • 1 baguette, sliced into 1/2-inch thick pieces and cut at an angle
  • 1/2 cup fresh mozzarella cheese, thinly sliced
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 200°C.
  2. In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, 1 tbsp of extra virgin olive oil, and balsamic vinegar.
  3. Season with salt and pepper according to your preference.
  4. Mix the ingredients together and let the mixture sit for about 10 minutes.
  5. Place the baguette slices on a baking sheet and brush each piece lightly with olive oil.
  6. Toast in the oven for about 5-6 minutes, or until they are golden and crisp.
  7. If you like garlic, you can rub a halved clove of garlic over the toasted side of each baguette slice.
  8. Place a piece of mozzarella on each slice of toasted bread. If using sliced mozzarella, you may want to cut it to fit the bread.
  9. Top the mozzarella with a generous spoonful of the tomato mixture.
  10. Drizzle a little more olive oil over each piece and garnish with additional basil leaves.
