Tomato and Mozzarella Bruschetta

Ingredients
- 4 large ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped, plus extra for garnish
- 2 cloves garlic, minced
- 1 tbsp extra virgin olive oil, plus extra for drizzling
- 1 tsp balsamic vinegar
- 1 baguette, sliced into 1/2-inch thick pieces and cut at an angle
- 1/2 cup fresh mozzarella cheese, thinly sliced
- 2 tbsp olive oil
Instructions
- Preheat your oven to 200°C.
- In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, 1 tbsp of extra virgin olive oil, and balsamic vinegar.
- Season with salt and pepper according to your preference.
- Mix the ingredients together and let the mixture sit for about 10 minutes.
- Place the baguette slices on a baking sheet and brush each piece lightly with olive oil.
- Toast in the oven for about 5-6 minutes, or until they are golden and crisp.
- If you like garlic, you can rub a halved clove of garlic over the toasted side of each baguette slice.
- Place a piece of mozzarella on each slice of toasted bread. If using sliced mozzarella, you may want to cut it to fit the bread.
- Top the mozzarella with a generous spoonful of the tomato mixture.
- Drizzle a little more olive oil over each piece and garnish with additional basil leaves.
