Steak Taco Salad with Honey Chipotle Dressing

Ingredients

  • 450g flank steak or sirloin steak
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup sweetcorn 
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup crumbled queso fresco or feta cheese
  • tortilla chips
  • fresh coriander, chopped
  • 1/4 cup olive oil
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1-2 chipotle peppers in adobo sauce, finely chopped
  • 1 clove garlic, minced

Instructions

  1. In a small bowl, mix the olive oil, salt, pepper, cumin, and chilli powder. Rub this mixture all over the steak.
  2. Heat a grill or grill pan over medium-high heat. Cook the steak for about 3 minutes per side for medium-rare, or until it reaches your desired doneness.
  3. Remove the steak from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
  4. In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, red onion, and avocado. Toss gently to mix the ingredients.
  5. In a small bowl, whisk together the olive oil, honey, lime juice, chopped chipotle peppers, minced garlic, salt, and pepper until well combined.
  6. Arrange the sliced steak on top of the salad.
  7. Drizzle the honey chipotle dressing over the salad.
  8. Sprinkle with crumbled queso fresco or feta cheese.
  9. Garnish with tortilla chips and fresh coriander.
