Steak Taco Salad with Honey Chipotle Dressing

Ingredients
- 450g flank steak or sirloin steak
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chilli powder
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black beans, drained and rinsed
- 1/2 cup sweetcorn
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup crumbled queso fresco or feta cheese
- tortilla chips
- fresh coriander, chopped
- 1/4 cup olive oil
- 2 tbsp honey
- 2 tbsp lime juice
- 1-2 chipotle peppers in adobo sauce, finely chopped
- 1 clove garlic, minced
Instructions
- In a small bowl, mix the olive oil, salt, pepper, cumin, and chilli powder. Rub this mixture all over the steak.
- Heat a grill or grill pan over medium-high heat. Cook the steak for about 3 minutes per side for medium-rare, or until it reaches your desired doneness.
- Remove the steak from the grill and let it rest for 5 minutes before slicing it thinly against the grain.
- In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, red onion, and avocado. Toss gently to mix the ingredients.
- In a small bowl, whisk together the olive oil, honey, lime juice, chopped chipotle peppers, minced garlic, salt, and pepper until well combined.
- Arrange the sliced steak on top of the salad.
- Drizzle the honey chipotle dressing over the salad.
- Sprinkle with crumbled queso fresco or feta cheese.
- Garnish with tortilla chips and fresh coriander.
