Sriracha Lime Chicken Lettuce Wraps

Ingredients

  • 3 chicken breasts, cut into small pieces
  • 2 tbsp olive oil
  • 2 tbsp sriracha sauce
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 lime, juice and wedges
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 head of lettuce, leaves separated
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup chopped fresh coriander

Instructions

  1. In a medium bowl, mix together the sriracha sauce, soy sauce, honey, lime juice, minced garlic, and grated ginger.
  2. Add the chicken pieces to the bowl and toss to coat evenly. 
  3. Heat the olive oil in a large pan over medium-high heat.
  4. Add the marinated chicken to the pan and cook for about 5-7 minutes, or until the chicken is cooked through and slightly caramelized. Season with salt and pepper to taste.
  5. Lay out the lettuce leaves on a serving plate.
  6. Spoon the cooked chicken onto the centre of each lettuce leaf.
  7. Top with shredded carrots, thinly sliced red bell pepper, and chopped fresh coriander.
  8. Serve the lettuce wraps with lime wedges on the side.
