Sriracha Lime Chicken Lettuce Wraps

Ingredients
- 3 chicken breasts, cut into small pieces
- 2 tbsp olive oil
- 2 tbsp sriracha sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 lime, juice and wedges
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 head of lettuce, leaves separated
- 1/2 cup shredded carrots
- 1/2 cup thinly sliced red bell pepper
- 1/4 cup chopped fresh coriander
Instructions
- In a medium bowl, mix together the sriracha sauce, soy sauce, honey, lime juice, minced garlic, and grated ginger.
- Add the chicken pieces to the bowl and toss to coat evenly.
- Heat the olive oil in a large pan over medium-high heat.
- Add the marinated chicken to the pan and cook for about 5-7 minutes, or until the chicken is cooked through and slightly caramelized. Season with salt and pepper to taste.
- Lay out the lettuce leaves on a serving plate.
- Spoon the cooked chicken onto the centre of each lettuce leaf.
- Top with shredded carrots, thinly sliced red bell pepper, and chopped fresh coriander.
- Serve the lettuce wraps with lime wedges on the side.
