Spinach and Goat Cheese Quesadillas
These Spinach and Goat Cheese Quesadillas are perfection on a plate and will brighten up any midweek meal.

Ingredients
- 4 large flour tortillas
- 2 cups fresh spinach leaves
- 115g goat cheese, crumbled
- 1 cup shredded mozzarella cheese
- 1/2 red onion, thinly sliced
- 1 clove garlic, minced
- salsa, sour cream, or guacamole for serving
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the fresh spinach leaves and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste.
- Remove from heat and set aside.
- Lay out half of the flour tortillas on a flat surface.
- Evenly distribute the sautéed spinach over the tortillas.
- Sprinkle the crumbled goat cheese and shredded mozzarella cheese over the spinach.
- Add the thinly sliced red onion on top.
- Place the remaining tortillas on top to form quesadillas.
- Carefully transfer one quesadilla to the pan on medium heat.
- Cook for about 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
- Cut each quesadilla into quarters and serve with salsa, sour cream, or guacamole.
