Spicy Ginger Pork Noodles

One of my favourite dishes is this simple Spicy Ginger Pork Noodles.

Ingredients

  • 450g ground pork
  • 4 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp chilli paste
  • 225g noodles
  • 2 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 spring onions, chopped
  • 1/2 cup coriander, chopped
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • sesame seeds, for garnish
  • lime wedges, for serving

Instructions

  1. Cook the noodles according to package instructions until al dente.
  2. In a large pan or wok, heat a bit of oil over medium-high heat.
  3. Add the ground pork, breaking it up with a spatula. Cook until no longer pink.
  4. Stir in 2 tbsp soy sauce, hoisin sauce, and chilli paste. Cook until the pork is nicely browned and crispy. Remove pork from the pan and set aside.
  5. In the same pan, add a little more oil if needed. Sauté the ginger and garlic for about 30 seconds until fragrant.
  6. Add the sliced bell pepper and carrot. Stir-fry for about 2-3 minutes until just tender.
  7. Return the cooked pork to the pan. Add the cooked noodles and toss everything together.
  8. In a small bowl, whisk together 2 tbsp soy sauce, rice vinegar, sesame oil, and sugar.
  9. Pour this sauce over the noodles and pork mixture, tossing to combine and heat through.
  10. Sprinkle with chopped spring onions, coriander, and sesame seeds.
  11. Serve with lime wedges on the side.
