Spicy Ginger Pork Noodles
One of my favourite dishes is this simple Spicy Ginger Pork Noodles.

Ingredients
- 450g ground pork
- 4 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tsp chilli paste
- 225g noodles
- 2 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 2 spring onions, chopped
- 1/2 cup coriander, chopped
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sugar
- sesame seeds, for garnish
- lime wedges, for serving
Instructions
- Cook the noodles according to package instructions until al dente.
- In a large pan or wok, heat a bit of oil over medium-high heat.
- Add the ground pork, breaking it up with a spatula. Cook until no longer pink.
- Stir in 2 tbsp soy sauce, hoisin sauce, and chilli paste. Cook until the pork is nicely browned and crispy. Remove pork from the pan and set aside.
- In the same pan, add a little more oil if needed. Sauté the ginger and garlic for about 30 seconds until fragrant.
- Add the sliced bell pepper and carrot. Stir-fry for about 2-3 minutes until just tender.
- Return the cooked pork to the pan. Add the cooked noodles and toss everything together.
- In a small bowl, whisk together 2 tbsp soy sauce, rice vinegar, sesame oil, and sugar.
- Pour this sauce over the noodles and pork mixture, tossing to combine and heat through.
- Sprinkle with chopped spring onions, coriander, and sesame seeds.
- Serve with lime wedges on the side.
