Spicy Chorizo and Egg Tacos

Ingredients

  • 4 small tortillas
  • 200g chorizo sausage, casings removed
  • 4 large eggs
  • 1 tbsp olive oil
  • ½ cup grated cheese (cheddar, Monterey Jack, or cotija)
  • 1 avocado, diced or sliced
  • ½ cup pico de gallo or salsa
  • fresh coriander leaves, for garnish
  • 1 lime, wedges

Instructions

  1. Heat a pan over medium-high heat. Add the chorizo, breaking it up with a spoon as it cooks.
  2. Cook for about 4-5 minutes until browned and fully cooked through. Transfer to a plate and keep warm.
  3. In a bowl, whisk the eggs, salt, and pepper.
  4. Reduce the pan heat to medium and add a drizzle of olive oil if needed.
  5. Pour in the eggs and cook gently, stirring with a spatula, until soft and fluffy (2-3 minutes). Remove from heat.
  6. Heat the tortillas in a dry pan for about 30 seconds per side, or microwave them.
  7. Divide the scrambled eggs and chorizo evenly among the tortillas.
  8. Top each taco with grated cheese, diced avocado, pico de gallo or salsa, and fresh coriander.
  9. Serve with lime wedges.
