Ingredients

  • 225g penne pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can chopped tomatoes
  • 1/2 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the penne pasta and cook according to the package instructions until al dente.
  3. In a large pan, heat the olive oil over medium heat.
  4. Add the minced garlic and finely chopped onion. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.
  5. Stir in the chopped tomatoes, red pepper flakes, dried oregano, and dried basil. Season with salt and pepper to taste.
  6. Bring the sauce to a simmer and cook for about 5-7 minutes, allowing the flavours to meld together. If the sauce is too thick, add a bit of the reserved pasta water.
  7. Add the cooked penne pasta to the pan with the sauce.
  8. Toss to coat the pasta evenly with the spicy arrabbiata sauce.
  9. Transfer the spicy arrabbiata penne to serving plates.
  10. Garnish with grated Parmesan cheese.
