Spaghetti Aglio e Olio

Ingredients

  • 340g spaghetti
  • 1/2 cup extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1/4 tsp red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • lemon zest

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to the package instructions until al dente.
  3. While the pasta is cooking, heat the olive oil in a large pan over medium heat.
  4. Add the sliced garlic and red pepper flakes to the pan.
  5. Cook, stirring frequently, until the garlic is golden and fragrant, about 2-3 minutes.
  6. Add the cooked spaghetti to the pan with the garlic oil.
  7. Toss to coat the spaghetti in the oil. If the pasta seems dry, add a little of the reserved pasta water.
  8. Season with salt to taste.
  9. Add the chopped parsley and toss to combine.
  10. Serve garnished with grated Parmesan cheese and lemon zest.
