Smoky Halloumi Tacos

Ingredients
- 200g halloumi cheese, sliced into 1/2-inch thick pieces
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 tsp chilli powder
- 1/4 tsp garlic powder
- 1/2 tsp cajun seasoning
- 60g natural yoghurt
- 3 ripe tomatoes, diced
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and finely chopped (optional)
- juice of 1 lime
- a handful of fresh coriander, chopped
- 4 small plain tortillas
- 1 little gem lettuce, finely chopped
Instructions
- In a small bowl, mix the olive oil, smoked paprika, cumin, chilli powder, garlic powder, salt, and pepper. Mix with the halloumi slices.
- Heat a griddle over medium-high heat. Once hot, add the halloumi slices and cook for 2-3 minutes on each side, or until they’re golden brown and crispy.
- In a bowl, combine the diced tomatoes, red onion, jalapeño (if using), lime juice, coriander, and a pinch of salt. Mix well and adjust the seasoning as needed.
- In a separate bowl, combine the yoghurt with the cajun seasoning and mix well.
- Warm the tortillas in a dry pan over medium-high heat for about 30 seconds on each side or in the microwave.
- Place a couple of slices of the cooked halloumi on each tortilla. Top with a generous spoonful of tomato salsa, lettuce and cajun yoghurt.
- Serve with fresh lime wedges on the side.
