Smoky Halloumi Tacos

You can’t go wrong with these tasty Smoky Halloumi Tacos. Perfect for a quick Friday date night.

Ingredients

  • 200g halloumi cheese, sliced into 1/2-inch thick pieces
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp chilli powder
  • 1/4 tsp garlic powder
  • 1/2 tsp cajun seasoning
  • 60g natural yoghurt
  • 3 ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped (optional)
  • juice of 1 lime
  • a handful of fresh coriander, chopped
  • 4 small plain tortillas
  • 1 little gem lettuce, finely chopped

Instructions

  1. In a small bowl, mix the olive oil, smoked paprika, cumin, chilli powder, garlic powder, salt, and pepper. Mix with the halloumi slices.
  2. Heat a griddle over medium-high heat. Once hot, add the halloumi slices and cook for 2-3 minutes on each side, or until they’re golden brown and crispy.
  3. In a bowl, combine the diced tomatoes, red onion, jalapeño (if using), lime juice, coriander, and a pinch of salt. Mix well and adjust the seasoning as needed.
  4. In a separate bowl, combine the yoghurt with the cajun seasoning and mix well.
  5. Warm the tortillas in a dry pan over medium-high heat for about 30 seconds on each side or in the microwave.
  6. Place a couple of slices of the cooked halloumi on each tortilla. Top with a generous spoonful of tomato salsa, lettuce and cajun yoghurt.
  7. Serve with fresh lime wedges on the side.
