Smoked Paprika and Chickpea Soup

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 tbsp smoked paprika
  • 1 tsp ground cumin
  • 2 cans chickpeas, drained and rinsed
  • 1 can chopped tomatoes with their juice
  • 4 cups vegetable stock
  • 2 cups fresh spinach leaves
  • 1 lemon
  • fresh parsley

Instructions

  1. Heat the olive oil in a large pot over medium heat then add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Stir in the smoked paprika and cumin. Cook until fragrant, about 1 minute.
  3. Add the chickpeas, diced tomatoes, and vegetable stock. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  4. Stir in the fresh spinach and cook until the leaves have wilted, about 2-3 minutes.
  5. Remove the soup from the heat and stir in the fresh lemon juice. Adjust seasoning with salt and pepper.
  6. Ladle the soup into bowls and serve with chopped fresh parsley.
