Simple Sweet Potato Soup
A warming Sweet Potato Soup that can be ready in minutes and enjoyed by everyone.

Ingredients
- 1 large sweet potato, peeled and diced
- 2 cups vegetable stock
- 1/2 cup coconut milk
- 1 tbsp fresh ginger, minced
- 1/2 tsp ground cinnamon
- 1/2 tsp chilli flakes, for garnish
- 1/2 tsp pumpkin seeds, for garnish
Instructions
- Microwave the diced sweet potato in a covered microwave-safe bowl with a bit of water for about 5 minutes, or until soft.
- In a blender, combine the softened sweet potato, vegetable stock, coconut milk, ginger, and cinnamon. Blend until smooth.
- Pour the blended soup mixture into a pot and warm over medium heat for about 3-5 minutes, stirring occasionally. Adjust the seasoning with salt and pepper to your taste.
- Once heated through, ladle the soup into bowls. Top with pumpkin seeds and chilli flakes, for added texture and flavour.
