Sesame Pork and Egg Fried Rice

This Sesame Pork and Egg Fried Rice recipe is great as a quick weeknight meal and can be easily customised with your favourite vegetables or extra spice.

Ingredients

  • 300g minced pork
  • 3 tbsp soy sauce
  • 3 tbsp sesame oil
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, minced
  • 1 tsp chilli flakes
  • 2 cups cooked jasmine or basmati rice (preferably day-old)
  • 2 eggs, lightly beaten
  • 1/2 cup frozen peas
  • 2 spring onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. Heat 1 tablespoon of sesame oil in a large pan or wok over medium-high heat.
  2. Add the ground pork, garlic, and ginger. Cook until the pork is browned and cooked through, breaking it up into small pieces.
  3. Stir in the soy sauce, hoisin sauce, rice vinegar, and chilli flakes.
  4. Cook for another minute, then set the pork aside.
  5. In the same pan, push the pork to one side. Add a little more sesame oil if needed and pour in the beaten eggs. Scramble the eggs until just set, then mix them into the pork.
  6. Add the remaining tablespoon of sesame oil to the pan and stir in the cooked rice. Toss to combine with the pork and eggs. Cook for 2 minutes, stirring occasionally to allow the rice to get slightly crispy.
  7. Add the frozen peas and spring onions, stir-frying until heated through.
  8. Stir in soy sauce and season with salt and pepper to taste. Sprinkle with sesame seeds and garnish with extra spring onions.
