Roasted Red Pepper Hummus Wrap

Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 cup roasted red peppers, from a jar, drained
- 2 tbsp tahini
- 1 garlic clove, minced
- 1 lemon
- 1/2 tsp cumin
- 1 tsp paprika
- 4 large tortillas
- 1 cup spinach
- 1 small cucumber, thinly sliced
- 1 small red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
Instructions
- In a food processor, combine chickpeas, roasted red peppers, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
- Add cumin, salt, and pepper to taste, and blend again. If the hummus is too thick, add a little water or more olive oil to reach the desired consistency.
- Lay out the tortillas on a flat surface.
- Spread a generous layer of hummus over each tortilla, leaving a small border around the edges.
- Arrange a layer of spinach leaves over the hummus.
- Add slices of cucumber, red onion, feta cheese, and olives.
- Tightly roll up the tortillas to enclose the fillings.
- Cut each wrap in half diagonally.
