Red Thai Curry Fried Rice

Ingredients
- 2 cups cooked jasmine rice (preferably chilled)
- 2 tbsp vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp red Thai curry paste
- 1 small carrot, diced
- 1 red bell pepper, diced
- 1/2 cup frozen peas
- 1/2 cup coconut milk
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 lime, cut into wedges
- 2 eggs
Instructions
- Ensure that your jasmine rice is cooked and chilled, as cold rice works best for fried rice.
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the chopped onion and cook for 2 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the red Thai curry paste to the pan and cook, stirring constantly, for about 1-2 minutes.
- Add the diced carrot and red bell pepper to the pan. Cook for 3 minutes until the vegetables begin to soften.
- Stir in the frozen peas and cook for another 2 minutes.
- Add the chilled jasmine rice to the pan and stir to combine with the vegetables and curry paste.
- Pour in the coconut milk, soy sauce, fish sauce, and sugar. Stir everything together until the rice is evenly coated with the sauce.
- Push the rice mixture to one side of the pan, then pour the beaten eggs into the empty side.
- Scramble the eggs until fully cooked, then mix them into the rice.
- Cook the fried rice for an additional minute, stirring occasionally, until everything is heated through and well combined.
