Prosciutto Wrapped Asparagus with Balsamic Glaze

Ingredients
- 16 fresh asparagus spears, trimmed
- 8 slices of prosciutto
- 2 tbsp olive oil
- 1/2 cup balsamic vinegar
- 2 tbsp brown sugar
- Parmesan cheese, grated
- 1 lemon
Instructions
- Preheat your oven to 200 degrees C.
- Wash the asparagus and trim off the tough bottoms of the spears.
- Blanche the asparagus in boiling water for 2 minutes to slightly soften.
- While they’re cooking, cut the prosciutto strips in half lengthwise to make them thinner.
- After 2 minutes, immediately plunge them into ice water to stop the cooking process.
- Wrap each asparagus spear with a strip of prosciutto. The prosciutto should be snug but not overly tight. Repeat this process until all the asparagus spears are wrapped.
- Arrange the wrapped spears on a baking tray and drizzle with olive oil and lightly season with pepper.
- Roast in the preheated oven for about 8 minutes, or until the prosciutto is crisp and the asparagus is tender.
- While the asparagus is in the oven, pour the balsamic vinegar and brown sugar into a small saucepan.
- Bring to a simmer over medium-low heat, stirring constantly until the sugar has dissolved.
- Continue to simmer until the glaze is reduced by half and thickened to a syrup-like consistency. Be careful not to burn it.
- Remove the asparagus from the oven and allow it to cool slightly.
- Drizzle the balsamic glaze over the wrapped asparagus then garnish with grated Parmesan and a squeeze of lemon.
