Pomegranate and Quinoa Salad with Feta

A simple but delicious salad option, this Pomegranate and Quinoa Salad with Feta is perfect throughout the Summer.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable stock
  • 1 cup pomegranate seeds
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped walnuts or almonds
  • 1/4 cup finely chopped red onion
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp honey or maple syrup
  • 1 clove garlic, minced

Instructions

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine the quinoa and water (or vegetable stock).
  3. Bring to a boil, then reduce the heat to low, cover, and simmer for about 8 minutes, or until the quinoa is tender and the water is absorbed.
  4. Remove from heat and let it sit, covered, for 2 minutes. Fluff with a fork and let it cool to room temperature.
  5. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, honey, minced garlic, salt, and pepper.
  6. In a large bowl, combine the cooked quinoa, pomegranate seeds, crumbled feta cheese, chopped parsley, chopped mint, chopped walnuts or almonds and finely chopped red onion.
  7. Pour the dressing over the salad and toss to combine.
