Pasta Primavera
Pasta Primavera is a perfect pasta dish for any day of the week. Packed with vegetables and is super easy to cook up.

Ingredients
- 340g pasta (penne, farfalle, or spaghetti)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small red bell pepper, thinly sliced
- 1 small yellow bell pepper, thinly sliced
- 1 small courgette, thinly sliced
- 1 small carrot, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1/2 cup peas (fresh or frozen)
- 1/4 cup grated Parmesan cheese
- fresh basil or parsley, chopped
Instructions
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large pan over medium-high heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced red and yellow bell peppers, courgette, and carrot to the pan. Cook for 3-4 minutes until the vegetables are tender but still crisp.
- Add the broccoli florets, peas, and cherry tomatoes to the pan. Cook for another 2-3 minutes until all the vegetables are tender.
- Add the cooked pasta to the pan with the vegetables.
- Toss everything together to combine. If the pasta seems dry, add a little of the reserved pasta water.
- Season with salt and pepper to taste.
- Transfer the Pasta Primavera to serving plates.
- Sprinkle with grated Parmesan cheese and fresh basil or parsley.
- Serve with lemon wedges on the side for an extra burst of freshness.
