Pasta Primavera

Pasta Primavera is a perfect pasta dish for any day of the week. Packed with vegetables and is super easy to cook up.

Ingredients

  • 340g pasta (penne, farfalle, or spaghetti)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small red bell pepper, thinly sliced
  • 1 small yellow bell pepper, thinly sliced
  • 1 small courgette, thinly sliced
  • 1 small carrot, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1/2 cup peas (fresh or frozen)
  • 1/4 cup grated Parmesan cheese
  • fresh basil or parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente.
  3. While the pasta is cooking, heat the olive oil in a large pan over medium-high heat.
  4. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the sliced red and yellow bell peppers, courgette, and carrot to the pan. Cook for 3-4 minutes until the vegetables are tender but still crisp.
  6. Add the broccoli florets, peas, and cherry tomatoes to the pan. Cook for another 2-3 minutes until all the vegetables are tender.
  7. Add the cooked pasta to the pan with the vegetables.
  8. Toss everything together to combine. If the pasta seems dry, add a little of the reserved pasta water.
  9. Season with salt and pepper to taste.
  10. Transfer the Pasta Primavera to serving plates.
  11. Sprinkle with grated Parmesan cheese and fresh basil or parsley.
  12. Serve with lemon wedges on the side for an extra burst of freshness.
