Paprika Chicken & Chorizo Toasted Wrap

Ingredients

  • 2 chicken breasts, thinly sliced
  • 100g chorizo, sliced
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 4 large tortillas
  • 1/2 cup grated cheese (cheddar or mozzarella)
  • 1/2 red onion, thinly sliced
  • 1 cup fresh spinach
  • hot sauce
  • sour cream

Instructions

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper.
  3. Add the chicken to the pan and cook for about 5-6 minutes until browned and cooked through. Remove and set aside.
  4. In the same pan, add the sliced chorizo and cook for 2 minutes until browned and slightly crispy. Remove and set aside.
  5. Lay the tortillas flat and divide the cooked chicken and chorizo evenly between them.
  6. Add grated cheese, red onion slices and spinach.
  7. Drizzle with sour cream and a few drops of hot sauce.
  8. Fold the sides of each tortilla over the filling, then roll them up tightly.
  9. Heat a clean pan or grill pan over medium heat and lightly toast each wrap for about 1 minute per side, until golden and crispy, and the cheese has melted inside.
  10. Slice the wraps in half and serve with extra sour cream or hot sauce on the side.
