Nicoise Salad
A Nicoise Salad is packed with amazing ingredients and is super simple to produce.

Ingredients
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup thinly sliced red onion
- 1 cup green beans, blanched and cut into 2-inch pieces
- 1/2 cup pitted black olives
- 4 hard-boiled eggs, quartered
- 1 cup boiled baby potatoes, halved
- 1 can tuna in olive oil, drained
- 4 anchovy fillets
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
Instructions
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined. Set aside.
- On a large serving platter or individual plates, arrange the mixed salad greens as a base.
- Arrange the cherry tomatoes, sliced red onion, green beans, black olives, hard-boiled eggs, and baby potatoes over the greens.
- Break the tuna into chunks and place it on top of the salad.
- Add the anchovy fillets.
- Drizzle the prepared dressing evenly over the salad.
- Gently toss the salad if desired, or serve with the dressing drizzled on top.
