Nicoise Salad

A Nicoise Salad is packed with amazing ingredients and is super simple to produce.

Ingredients

  • 2 cups mixed salad greens 
  • 1 cup cherry tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1 cup green beans, blanched and cut into 2-inch pieces
  • 1/2 cup pitted black olives
  • 4 hard-boiled eggs, quartered
  • 1 cup boiled baby potatoes, halved
  • 1 can tuna in olive oil, drained
  • 4 anchovy fillets
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined. Set aside.
  2. On a large serving platter or individual plates, arrange the mixed salad greens as a base.
  3. Arrange the cherry tomatoes, sliced red onion, green beans, black olives, hard-boiled eggs, and baby potatoes over the greens.
  4. Break the tuna into chunks and place it on top of the salad.
  5. Add the anchovy fillets.
  6. Drizzle the prepared dressing evenly over the salad.
  7. Gently toss the salad if desired, or serve with the dressing drizzled on top.
