Moroccan Spiced Carrot Salad

Ingredients
- 4 large carrots, peeled and grated or julienned
- 1/4 cup raisins
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh coriander
- 1/4 cup sliced almonds, toasted
- 1/4 cup crumbled feta cheese
- 3 tbsp olive oil
- 1 lemon
- 1 tbsp honey
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp ground paprika
- 1/4 tsp ground ginger
- 1/4 tsp ground coriander
Instructions
- Place the grated carrots in a large salad bowl.
- Add the raisins, chopped fresh parsley, chopped fresh coriander, and toasted sliced almonds to the bowl with the carrots.
- Add the crumbled feta cheese.
- In a small bowl, whisk together the olive oil, fresh lemon juice, honey, ground cumin, ground cinnamon, ground paprika, ground ginger, ground coriander, salt, and pepper until well combined.
- Pour the dressing over the carrot mixture.
- Toss well to coat all the ingredients evenly with the dressing.
