Ingredients
- 2 tbsp white miso paste
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 2 tsp sesame oil
- 4 cod fillets
- 1 tbsp olive oil
- 4 baby bok choy heads, halved lengthwise
- 2 garlic cloves, minced
- 1-inch ginger piece, finely grated

Instructions
- In a small bowl, whisk together the miso paste, mirin, soy sauce, brown sugar, and sesame oil until smooth. Set aside.
- Preheat your oven to 200°C.
- Pat the cod fillets dry with paper towels and season lightly with salt and pepper.
- Heat olive oil in an oven-safe pan over medium-high heat. Sear the cod fillets for about 2 minutes on one side until golden.
- Flip the cod fillets, brush them generously with the miso glaze, and transfer the pan to the oven or use an oven dish.
- Bake for about 7 minutes, or until the cod is cooked through and flakes easily with a fork.
- While the cod is baking, heat sesame oil in a separate pan over medium heat.
- Add minced garlic and grated ginger, sautéing briefly until fragrant.
- Place the halved bok choy in the pan, cut side down, and cook for about 2-3 minutes until the bok choy starts to wilt.
- Flip the bok choy, cover the pan, and let it steam for an additional 2-3 minutes until tender.
- Arrange the cooked bok choy on plates. Place a piece of miso 1glazed cod on top of the bok choy.
- Drizzle any remaining miso glaze from the pan over the cod.
