Mediterranean Couscous Salad

Ingredients

  • 1 cup couscous
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 clove garlic, minced
  • 1 tsp dried oregano

Instructions

  1. Place the couscous in a large bowl.
  2. Pour 1 cup of boiling water over the couscous, cover with a plate or plastic wrap, and let it sit for 5 minutes.
  3. Fluff the couscous with a fork to separate the grains.
  4. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper.
  5. Add the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and mint to the bowl with the couscous.
  6. Pour the dressing over the salad and toss to combine until everything is evenly coated.
  7. Transfer the salad to a serving platter and garnish with extra parsley or mint.
