Mediterranean Couscous Salad

Ingredients
- 1 cup couscous
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 clove garlic, minced
- 1 tsp dried oregano
Instructions
- Place the couscous in a large bowl.
- Pour 1 cup of boiling water over the couscous, cover with a plate or plastic wrap, and let it sit for 5 minutes.
- Fluff the couscous with a fork to separate the grains.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper.
- Add the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and mint to the bowl with the couscous.
- Pour the dressing over the salad and toss to combine until everything is evenly coated.
- Transfer the salad to a serving platter and garnish with extra parsley or mint.
