Marmite & Peanut Butter Pork Udon

Ingredients
- 300g pork tenderloin, sliced
- 200g udon noodles
- 1 tbsp Marmite
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 1 small onion, thinly sliced
- 1 red chilli, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp sugar
- 2 spring onions, sliced for garnish
- sesame seeds
Instructions
- Prepare the udon noodles according to the package instructions.
- In a bowl, mix 1 tablespoon of soy sauce and 1 teaspoon of peanut butter. Add the thinly sliced pork and mix together.
- In a small bowl, combine the Marmite, peanut butter, soy sauce, oyster sauce, rice vinegar, and sugar. Mix well until smooth.
- Heat sesame oil in a large pan or wok over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes until cooked through. Remove the pork from the pan and set aside.
- In the same pan, add a little more oil if needed. Stir-fry the garlic, onion, and chilli for 2-3 minutes until fragrant and softened.
- Return the pork to the pan and add the cooked udon noodles. Pour in the Marmite and peanut butter sauce, tossing everything together to coat the noodles and pork in the sauce.
- Divide the Marmite & Peanut Butter Pork Udon into bowls. Garnish with sliced spring onions and sesame seeds.
