Maple Glazed Salmon with Mango Salsa
This Maple Glazed Salmon with Mango Salsa is so fresh and tasty, but can be made in less than 10 minutes!

Ingredients
- 4 salmon fillets
- 1/4 cup maple syrup
- 2 tbsp soy sauce
- 1 clove garlic, minced
- 1 tbsp grated fresh ginger
- 1 tbsp olive oil
- 1 mango, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, seeded and minced (optional)
- 1/4 cup fresh coriander leaves, chopped
- juice of 1 lime
- 1 cup white rice
Instructions
- Cook the rice with twice as much water, and salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
- Season the salmon fillets with salt and pepper.
- Heat olive oil in a large pan over medium-high heat and place the salmon skin-side down in the pan. Cook for about 4 minutes, then flip the fillets.
- In a small bowl, mix together the maple syrup, soy sauce, garlic, and ginger.
- Brush the maple glaze over the salmon and cook for another 4-5 minutes until the salmon is glazed and cooked through.
- In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), coriander, lime juice, salt and pepper to taste and then mix together.
- Spoon a bed of white rice onto each plate and place the maple glazed salmon on top of the rice.
- Generously top the salmon with the mango salsa and serve with additional coriander.
