- 340g spaghetti or tagliatelle
- 1 cup ricotta cheese
- 1 lemon
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cups fresh spinach
- extra virgin olive oil
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water.
- In a bowl, combine ricotta cheese, lemon zest, lemon juice, and Parmesan cheese. Whisk in olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste.
- Pour the lemon ricotta mixture over the drained pasta in the pot. Toss gently to coat the pasta evenly, adding reserved pasta water a little at a time to achieve a creamy consistency.
- Add fresh spinach to the pasta and stir until the spinach wilts and is evenly distributed throughout the pasta.
- Serve the pasta drizzled with a little extra virgin olive oil and additional Parmesan cheese sprinkled on top.
