Lemon and Pesto Gnocchi
For me, this Lemon and Pesto Gnocchi is the ultimate comfort food, and all ready in under 10 minutes!

Ingredients
- 300g pack of gnocchi
- 100g frozen peas
- 70g baby spinach
- 4 tbsp fresh pesto
- 3 tbsp crème fraîche
- zest of 1 lemon
- juice of ½ lemon
- 2 tbsp pine nuts
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions.
- In a dry skillet, toast the pine nuts over medium heat until golden and fragrant, about 3-5 minutes. Stir frequently to prevent burning and then set aside.
- Two minutes before the gnocchi are done, add the peas and spinach to a pan.
- Once the spinach has wilted, mix in the fresh pesto, crème fraîche, lemon juice and heat through gently.
- Transfer the gnocchi using a slotted spoon into the pan and mix until well combined with the creamy sauce.
- Taste and adjust seasoning with salt and pepper if necessary.
- Serve with a sprinkle of toasted pine nuts and lemon zest.
