Ingredients

  • 450g lamb mince
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground coriander
  • 2 tbsp pine nuts
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 4-6 flatbreads
  • plain yoghurt 
  • fresh mint leaves 
  • pomegranate seeds

Instructions

  1. Preheat your oven to 175°C.
  2. Place the pre-bought flatbreads on a baking sheet.
  3. Place the baking sheet in the preheated oven and bake for 8 minutes, or until the flatbreads are slightly crispy.
  4. In a large pan, heat the olive oil over medium heat.
  5. Add the chopped onion and cook until softened about 2 minutes.
  6. Add the minced garlic and cook for another minute until fragrant.
  7. Add the lamb to the pan and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.
  8. Stir in the cumin, cinnamon, allspice, nutmeg, coriander, salt, and pepper.
  9. Cook for another 2-3 minutes to allow the spices to blend with the lamb.
  10. Add the pine nuts to the lamb mixture and cook until they are lightly toasted.
  11. Stir in the chopped parsley and lemon juice. Mix well and remove from heat.
  12. Remove the flatbreads from the oven and spoon the spiced lamb mixture evenly over each flatbread, spreading it out to cover the surface.
  13. Top with a dollop of plain yoghurt, fresh mint leaves, and pomegranate seeds.
