Lamb & Pistachio Tagine with Couscous

Ingredients

  • 500g lamb mince
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • 1/4 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • can of chopped tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp honey
  • pistachios, roughly chopped
  • 1 tbsp olive oil
  • fresh parsley or coriander
  • 200g couscous
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, combine the couscous with olive oil and a pinch of salt. Pour over boiling water.
  2. Cover with a plate or cling film and let it sit for about 5-10 minutes until the liquid is absorbed. Fluff the couscous with a fork to separate the grains.
  3. Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until softened and translucent, about 2 minutes.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Add the lamb mince to the pan, breaking it up with a spoon, and cook until browned and fully cooked, about 5-7 minutes.
  6. Add cumin, cinnamon, coriander, turmeric, paprika, allspice, and cayenne pepper to the lamb mixture. Stir well to coat the lamb with spices.
  7. Pour in the chopped tomatoes and tomato paste. Stir to combine.
  8. Add honey, salt, and pepper and stir in the roughly chopped pistachios.
  9. Serve the lamb mixture over the prepared couscous. Garnish with fresh parsley or coriander.
