Kimchi Noodles

Kimchi Noodles are a great healthy meal that I love to have every few weeks.

Ingredients

  • 225g noodles
  • 1 cup kimchi, chopped
  • 2 tbsp kimchi juice (from the kimchi jar)
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp gochujang
  • 1 tsp sesame oil
  • 1/2 cup vegetable broth or water
  • 1 green onion, chopped
  • 1 tsp sesame seeds
  • 1 egg

Instructions

  1. Bring a large pot of water to a boil. Cook the noodles according to the package instructions until al dente. 
  2. In a large pan or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the chopped kimchi to the pan and cook for 3 minutes, stirring occasionally, until the kimchi is slightly caramelised.
  5. Stir in the kimchi juice, soy sauce, gochujang, and sesame oil.
  6. Pour in the vegetable stock or water and bring the mixture to a simmer.
  7. Add the cooked noodles to the pan and toss to coat them evenly in the sauce.
  8. Cook for an additional 2-3 minutes, stirring occasionally, until the noodles are heated through and well combined with the kimchi.
  9. Garnish with chopped green onion, sesame seeds, and a soft-boiled egg if desired.
