Kimchi Noodles
Kimchi Noodles are a great healthy meal that I love to have every few weeks.

Ingredients
- 225g noodles
- 1 cup kimchi, chopped
- 2 tbsp kimchi juice (from the kimchi jar)
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp gochujang
- 1 tsp sesame oil
- 1/2 cup vegetable broth or water
- 1 green onion, chopped
- 1 tsp sesame seeds
- 1 egg
Instructions
- Bring a large pot of water to a boil. Cook the noodles according to the package instructions until al dente.
- In a large pan or wok, heat the vegetable oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chopped kimchi to the pan and cook for 3 minutes, stirring occasionally, until the kimchi is slightly caramelised.
- Stir in the kimchi juice, soy sauce, gochujang, and sesame oil.
- Pour in the vegetable stock or water and bring the mixture to a simmer.
- Add the cooked noodles to the pan and toss to coat them evenly in the sauce.
- Cook for an additional 2-3 minutes, stirring occasionally, until the noodles are heated through and well combined with the kimchi.
- Garnish with chopped green onion, sesame seeds, and a soft-boiled egg if desired.
