Honey Sriracha Glazed Chicken

I absolutely love this Honey Sriracha Glazed Chicken, packed with amazing flavour and perfect for a midweek meal.

Ingredients

  • 450g chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp sriracha sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups water
  • 2 spring onions, chopped
  • sesame seeds

Instructions

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt. Stir to combine.
  2. Reduce the heat to low, cover, and let it simmer for about 10 minutes.
  3. Season the chicken breasts or thighs with salt and pepper on both sides.
  4. Heat the olive oil in a large pan over medium-high heat.
  5. Add the chicken to the pan and cook for about 4 minutes on each side, until the chicken is golden brown and cooked through. 
  6. Whilst the chicken is cooking, in a small bowl, whisk together the soy sauce, honey, sriracha sauce, rice vinegar, and minced garlic.
  7. Pour the mixture into the pan and bring to a simmer over medium heat, until the sauce thickens slightly.
  8. Serve the Honey Sriracha Glazed Chicken over a bed of fluffy rice and garnish with chopped spring onions and sesame seeds.
