Honey Sriracha Glazed Chicken

Ingredients
- 450g chicken breasts or thighs
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp sriracha sauce
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups water
- 2 spring onions, chopped
- sesame seeds
Instructions
- In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt. Stir to combine.
- Reduce the heat to low, cover, and let it simmer for about 10 minutes.
- Season the chicken breasts or thighs with salt and pepper on both sides.
- Heat the olive oil in a large pan over medium-high heat.
- Add the chicken to the pan and cook for about 4 minutes on each side, until the chicken is golden brown and cooked through.
- Whilst the chicken is cooking, in a small bowl, whisk together the soy sauce, honey, sriracha sauce, rice vinegar, and minced garlic.
- Pour the mixture into the pan and bring to a simmer over medium heat, until the sauce thickens slightly.
- Serve the Honey Sriracha Glazed Chicken over a bed of fluffy rice and garnish with chopped spring onions and sesame seeds.
