  1. Start by cooking the rice according to the package instructions. Add 1 cup of rice with 2 cups of cold water, boil, and then simmer with the lid on for 10 minutes.
  2. In a small bowl, whisk together the Dijon mustard, honey, soy sauce, minced garlic, and lemon juice until well combined. Set aside.
  3. Season the salmon fillets with salt and pepper on both sides.
  4. Heat olive oil in a large pan over medium-high heat.
  5. Place the salmon fillets in the pan, skin side down if the skin is on, and cook for about 4 minutes, until the skin is crispy.
  6. Carefully flip the salmon fillets and cook for another 3 minutes, until the salmon is almost cooked through.
  7. Spoon the honey mustard glaze over the salmon fillets and cook for an additional 1-2 minutes, until the glaze is hot and the salmon is fully cooked.
  8. Serve the honey mustard glazed salmon fillets over a bed of rice.
  9. Drizzle any remaining glaze from the pan over the salmon and rice.
  10. Garnish with chopped fresh parsley and lemon wedges.
