Ingredients
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 clove garlic, minced
- 1 lemon, juice and wedges
- 4 salmon fillets
- 1 cup long-grain rice
- fresh parsley, chopped
Instructions
- Start by cooking the rice according to the package instructions. Add 1 cup of rice with 2 cups of cold water, boil, and then simmer with the lid on for 10 minutes.
- In a small bowl, whisk together the Dijon mustard, honey, soy sauce, minced garlic, and lemon juice until well combined. Set aside.
- Season the salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large pan over medium-high heat.
- Place the salmon fillets in the pan, skin side down if the skin is on, and cook for about 4 minutes, until the skin is crispy.
- Carefully flip the salmon fillets and cook for another 3 minutes, until the salmon is almost cooked through.
- Spoon the honey mustard glaze over the salmon fillets and cook for an additional 1-2 minutes, until the glaze is hot and the salmon is fully cooked.
- Serve the honey mustard glazed salmon fillets over a bed of rice.
- Drizzle any remaining glaze from the pan over the salmon and rice.
- Garnish with chopped fresh parsley and lemon wedges.
