Honey Garlic Chicken Stir-Fry

Ingredients

  • 450g chicken breast or thighs, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 carrot, thinly sliced
  • 1 small broccoli head, cut into florets
  • 1/2 cup green beans
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2-3 spring onions, chopped
  • sesame seeds
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tsp sesame oil
  • 1/4 cup water

Instructions

  1. In a small bowl, whisk together honey, soy sauce, rice vinegar, water, and sesame oil. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the chicken pieces and cook for 5-6 minutes, or until golden brown and cooked through. Remove the chicken from the pan and set aside.
  3. In the same pan, add another tablespoon of oil if necessary. Add garlic, ginger, and the sliced vegetables (bell pepper, carrot, broccoli, snap peas). Stir-fry for 3 minutes until vegetables are tender but still crisp.
  4. Add the cooked chicken back to the pan with the vegetables. Pour the prepared honey garlic sauce over the chicken and vegetables. Stir to coat everything in the sauce. Let it cook for a minute until the sauce starts to thicken.
  5. Stir in the cornstarch mixed with water to the pan and let it cook for an additional minute or until the sauce thickens to your desired consistency.
  6. Remove from heat and garnish with chopped spring onions and sesame seeds.
