Hoisin Chicken Lettuce Wraps

Ingredients
- 450g minced chicken
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1/4 cup hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 cup water chestnuts, chopped
- 2 spring onions, chopped
- lettuce leaves (like iceberg, romaine, or butter lettuce)
Instructions
- Heat the sesame oil in a large pan over medium-high heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the minced chicken to the pan. Cook, breaking up the meat with a spoon, until browned and cooked through (about 5-7 minutes).
- In a small bowl, mix the hoisin sauce, soy sauce, and rice vinegar. Add this sauce to the pan once the chicken is cooked.
- Stir in the chopped water chestnuts and half of the spring onions. Cook for another minute, allowing the flavours to combine.
- Wash and dry the lettuce leaves. Separate them into individual cups.
- Spoon the chicken mixture into each lettuce leaf. Top with remaining spring onions.
