Grilled Halloumi with Watermelon and Mint Salad

This Grilled Halloumi with Watermelon and Mint Salad is simple but one of my favourites for an easy salad option.

Ingredients

  • 225g halloumi cheese, sliced into 1/4 inch thick pieces
  • 2 cups watermelon, cut into bite-sized cubes
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh rocket or baby spinach
  • 1 tbsp olive oil
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey

Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Set aside.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Brush the halloumi slices with olive oil to prevent sticking.
  4. Grill the halloumi for about 2-3 minutes on each side, or until golden brown and grill marks appear. Remove from heat and set aside.
  5. In a large bowl, combine the watermelon cubes, chopped mint leaves, thinly sliced red onion, and rocket or baby spinach.
  6. Drizzle the dressing over the salad and toss gently to combine.
  7. Arrange the grilled halloumi slices on a serving platter or individual plates.
  8. Top with the watermelon and mint salad.
  9. Season with additional salt and pepper if needed.
