Grilled Chicken Breast with Peri Peri Rice

Ingredients
- 2 chicken breasts, butterflied
- 2 tbsp olive oil
- 3 tbsp peri peri sauce
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 lemon
- 1 pack of microwaveable rice
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 1 garlic clove, minced
- fresh parsley, for garnish
Instructions
- In a bowl, mix olive oil, peri peri sauce, smoked paprika, garlic powder, salt, and pepper.
- Coat the chicken breasts with the marinade.
- Preheat grill pan over medium-high heat. Grill the chicken for 3-5 minutes on each side until fully cooked.
- In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, diced red bell pepper, and minced garlic. Cook for 3-4 minutes until softened and fragrant.
- Stir in the smoked paprika and peri peri sauce. Cook for 1-2 minutes to combine the flavours.
- Microwave the rice according to package instructions.
- Add the cooked microwave rice to the pan with the vegetables and peri peri sauce. Stir everything together and cook for another 1-2 minutes to heat through.
- Once heated, garnish the rice with fresh parsley.
- Plate the spicy peri peri rice and top with the sliced grilled chicken breast. Serve with lemon wedges on the side.
