Grilled Chicken Breast with Peri Peri Rice

Ingredients

  • 2 chicken breasts, butterflied 
  • 2 tbsp olive oil
  • 3 tbsp peri peri sauce 
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 lemon
  • 1 pack of microwaveable rice 
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 1 garlic clove, minced
  • fresh parsley, for garnish

Instructions

  1. In a bowl, mix olive oil, peri peri sauce, smoked paprika, garlic powder, salt, and pepper.
  2. Coat the chicken breasts with the marinade.
  3. Preheat grill pan over medium-high heat. Grill the chicken for 3-5 minutes on each side until fully cooked.
  4. In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, diced red bell pepper, and minced garlic. Cook for 3-4 minutes until softened and fragrant.
  5. Stir in the smoked paprika and peri peri sauce. Cook for 1-2 minutes to combine the flavours.
  6. Microwave the rice according to package instructions.
  7. Add the cooked microwave rice to the pan with the vegetables and peri peri sauce. Stir everything together and cook for another 1-2 minutes to heat through.
  8. Once heated, garnish the rice with fresh parsley.
  9. Plate the spicy peri peri rice and top with the sliced grilled chicken breast. Serve with lemon wedges on the side.
