Greek Salad with Grilled Halloumi

Ingredients
- 225g halloumi cheese, sliced
- 2 medium cucumbers, diced
- 3 large tomatoes, diced
- 1 small red onion, thinly sliced
- 1/2 cup olives, pitted
- 1 green bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 lemon
- 1 tsp dried oregano
- 1 garlic clove, minced
Instructions
- In a large mixing bowl, combine diced cucumbers, tomatoes, red onion, kalamata olives, and green bell pepper. Toss these ingredients together.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and pepper. Adjust seasoning to taste.
- Pour the dressing over the salad and toss to coat all the vegetables evenly. Let it sit for a few minutes to marinate.
- Heat a grill pan over medium-high heat. Brush the halloumi slices lightly with olive oil.
- Grill the halloumi for 2-3 minutes on each side or until golden brown.
- Add the grilled halloumi slices to the top of the salad and sprinkle crumbled feta cheese over the salad.
