Ingredients

  • 2 chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • juice of ½ a lemon
  • 1 pack microwave rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted and halved
  • ½ cup feta cheese, crumbled
  • 1 cup baby spinach
  • tzatziki sauce

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add the chicken, minced garlic, oregano, cumin, paprika, lemon juice, salt, and pepper.
  3. Cook for 6-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Set aside.
  4. Microwave the rice.
  5. In a bowl, start with a base of cooked rice.
  6. Layer with baby spinach, tomatoes, cucumber, red onion, olives, and crumbled feta.
  7. Top with the cooked chicken.
  8. Spoon the tzatziki sauce over the bowls.
