Garlic Lemon Prawn Pasta

Ingredients
- 225g spaghetti or your preferred pasta
- 450g large prawns, peeled and deveined
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1 lemon
- 1/4 cup white wine or chicken stock
- 2 tbsp unsalted butter
- 2 tbsp fresh parsley, chopped
- grated Parmesan cheese for serving
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat 2 tablespoons of olive oil in a large pan over medium-high heat.
- Add the prawns, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove the prawns from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of olive oil.
- Add the minced garlic and red pepper flakes and sauté for 1-2 minutes until fragrant.
- Stir in the lemon zest and juice, and then pour in the white wine (or chicken stock) and let the mixture simmer for 2-3 minutes.
- Add the cooked pasta to the pan and toss to coat in the garlic lemon sauce. If the pasta seems dry, add a little of the reserved pasta water.
- Stir in the butter and allow it to melt into the sauce.
- Return the cooked prawns to the pan and toss everything together until well combined.
- Divide the Garlic Lemon Prawn Pasta among serving plates.
- Garnish with fresh parsley and grated Parmesan cheese.
