Garlic Lemon Prawn Pasta

Ingredients

  • 225g spaghetti or your preferred pasta
  • 450g large prawns, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1 lemon
  • 1/4 cup white wine or chicken stock
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped
  • grated Parmesan cheese for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. 
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large pan over medium-high heat.
  3. Add the prawns, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove the prawns from the pan and set aside.
  4. In the same pan, add the remaining 1 tablespoon of olive oil.
  5. Add the minced garlic and red pepper flakes and sauté for 1-2 minutes until fragrant.
  6. Stir in the lemon zest and juice, and then pour in the white wine (or chicken stock) and let the mixture simmer for 2-3 minutes.
  7. Add the cooked pasta to the pan and toss to coat in the garlic lemon sauce. If the pasta seems dry, add a little of the reserved pasta water.
  8. Stir in the butter and allow it to melt into the sauce.
  9. Return the cooked prawns to the pan and toss everything together until well combined.
  10. Divide the Garlic Lemon Prawn Pasta among serving plates.
  11. Garnish with fresh parsley and grated Parmesan cheese.
