Garlic and Herb Grilled Halloumi Pitta

You can’t beat a bit of Greek food, so this Garlic and Herb Grilled Halloumi Pitta is a perfect option any day of the week.

Ingredients

  • 225g halloumi cheese, sliced into 1/2-inch thick pieces
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • 4 pitta breads
  • 1 cup mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup tzatziki sauce

Instructions

  1. In a small bowl, mix the olive oil, minced garlic, oregano, thyme, basil, paprika, and black pepper.
  2. Brush the halloumi slices with the garlic and herb mixture, making sure they are well-coated.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the halloumi slices for about 2-3 minutes on each side, or until golden brown and slightly charred. Remove from heat and set aside.
  5. Warm the pitta breads in a toaster or on the grill for about 1 minute until soft and pliable.
  6. Place a handful of mixed salad greens in the centre of each pitta bread.
  7. Add a few cherry tomato halves, cucumber slices, and red onion slices.
  8. Place the grilled halloumi slices on top of the vegetables and drizzle with tzatziki sauce.
  9. Fold the pitta bread around the filling to create a wrap.
