Garlic and Herb Grilled Halloumi Pitta

Ingredients
- 225g halloumi cheese, sliced into 1/2-inch thick pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried basil
- 1/2 tsp paprika
- 4 pitta breads
- 1 cup mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup tzatziki sauce
Instructions
- In a small bowl, mix the olive oil, minced garlic, oregano, thyme, basil, paprika, and black pepper.
- Brush the halloumi slices with the garlic and herb mixture, making sure they are well-coated.
- Preheat a grill or grill pan over medium-high heat.
- Grill the halloumi slices for about 2-3 minutes on each side, or until golden brown and slightly charred. Remove from heat and set aside.
- Warm the pitta breads in a toaster or on the grill for about 1 minute until soft and pliable.
- Place a handful of mixed salad greens in the centre of each pitta bread.
- Add a few cherry tomato halves, cucumber slices, and red onion slices.
- Place the grilled halloumi slices on top of the vegetables and drizzle with tzatziki sauce.
- Fold the pitta bread around the filling to create a wrap.
