Garlic and Caramelised Onion Spaghetti

Ingredients
- 400g spaghetti
- 3 tbsp olive oil
- 6 cloves garlic, thinly sliced
- 200g caramelised onions
- 1/2 cup white wine or vegetable stock
- 1/2 tsp red pepper flakes
- 1/4 cup grated Parmesan cheese
- fresh parsley, chopped

Instructions
- Bring a large pot of salted water to a boil, add the spaghetti and cook according to the package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat.
- Add the sliced garlic and cook until it becomes golden and fragrant, about 2-3 minutes.
- Add the caramelised onions from the jar to the pan and stir well to combine with the garlic.
- Cook for another 2-3 minutes until the mixture is heated through.
- Pour in the white wine or vegetable stock to deglaze the pan, scraping up any browned bits from the bottom.
- Let the liquid simmer for about 2-3 minutes until it reduces slightly.
- Add the cooked spaghetti to the pan and toss well to coat with the garlic and caramelised onion mixture.
- If the pasta looks dry, gradually add some of the reserved pasta water until you reach your desired consistency.
- Season with red pepper flakes, salt, and pepper to taste.
- Toss in the grated Parmesan cheese, mixing well and garnish with chopped fresh parsley.
