Creamy Mushroom and Spinach Toast
Try this Creamy Mushroom and Spinach Toast for a simple meal that has two of my all-time favourite ingredients – spinach and mushrooms.

Ingredients
- 4 slices of whole-grain or sourdough bread
- 2 tbsp olive oil or butter
- 1/4 cup heavy cream
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 225g mushrooms, sliced
- 2 cups fresh spinach leaves
- 1/4 tsp dried thyme
- 1/4 cup grated Parmesan cheese or crumbled feta
- fresh parsley or chives for garnish
Instructions
- Lightly toast the slices of bread in a toaster or on a grill pan until golden and crispy. Set aside.
- In a large pan, heat the olive oil or butter over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced mushrooms to the pan and cook for 5 minutes, stirring occasionally, until the mushrooms are browned and softened.
- Stir in the fresh spinach leaves and cook until wilted, about 2 minutes.
- Reduce the heat to low and pour in the heavy cream or half-and-half.
- Stir in the grated Parmesan cheese and let the mixture simmer for 2 minutes until the sauce thickens slightly.
- Season with salt and pepper to taste.
- Spoon the creamy mushroom and spinach mixture over the toasted bread slices.
- Garnish with fresh parsley or thyme.
