Creamy Bacon and Pea Pasta

This Creamy Bacon and Pea Pasta is a quick and delicious dish that combines the savoury flavours of bacon with the sweetness of peas, all wrapped in a rich and creamy sauce.

Ingredients

  • 340g pasta
  • 6 rashers of bacon, chopped
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
  2. While the pasta is cooking, heat a large pan over medium heat. Add the chopped bacon and cook until crispy, about 5 minutes. Remove the bacon from the pan and set aside on a paper towel-lined plate to drain.
  3. In the same pan, add the minced garlic to the pan and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and the sauce is creamy. Season with salt and pepper to taste.
  5. Add the cooked pasta and frozen peas to the pan with the cream sauce. Toss to combine and cook for an additional 2 minutes until the peas are heated through and the pasta is well coated with the sauce. If the sauce is too thick, add a little reserved pasta water to loosen it.
  6. Served the creamy pasta topped with crispy bacon, extra Parmesan cheese, and a sprinkle of fresh parsley.
