Creamy Bacon and Pea Pasta

Ingredients
- 340g pasta
- 6 rashers of bacon, chopped
- 1 cup frozen peas
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
- While the pasta is cooking, heat a large pan over medium heat. Add the chopped bacon and cook until crispy, about 5 minutes. Remove the bacon from the pan and set aside on a paper towel-lined plate to drain.
- In the same pan, add the minced garlic to the pan and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and the sauce is creamy. Season with salt and pepper to taste.
- Add the cooked pasta and frozen peas to the pan with the cream sauce. Toss to combine and cook for an additional 2 minutes until the peas are heated through and the pasta is well coated with the sauce. If the sauce is too thick, add a little reserved pasta water to loosen it.
- Served the creamy pasta topped with crispy bacon, extra Parmesan cheese, and a sprinkle of fresh parsley.
