Creamy Avocado Pasta

Ingredients

  • 340g pasta
  • 2 ripe avocados, peeled and pitted
  • 1/4 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cherry tomatoes, halved
  • fresh basil leaves, for garnish

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente.
  3. Reserve 1/2 cup of the pasta water, then drain the pasta.
  4. In a food processor or blender, combine the avocados, fresh basil leaves, garlic, lemon juice, and olive oil.
  5. Blend until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water.
  6. Season with salt and pepper to taste.
  7. In a large bowl, toss the cooked pasta with the creamy avocado sauce until well coated.
  8. If using, sprinkle with grated Parmesan cheese and toss again to combine.
  9. Divide the creamy avocado pasta among serving plates.
  10. Garnish with halved cherry tomatoes and fresh basil leaves.
