Courgetti With Pesto and Cherry Tomatoes
I’ve been really enjoying this Courgetti With Pesto and Cherry Tomatoes for a simple midweek meal.

Ingredients
- 4 medium courgettes, spiralised into noodles
- 1 tbsp olive oil
- 3 cups fresh basil leaves, packed
- 1/2 cup grated Parmesan cheese
- 1/3 cup pine nuts
- 2 cloves garlic, minced
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
- 1 tbsp lemon juice
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
Instructions
- In a food processor, combine the basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Pulse until the ingredients are finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined.
- Season with salt and pepper to taste. Add lemon juice. Set aside.
- Heat the olive oil in a large pan over medium heat.
- Add the spiralised courgette noodles and sauté for 2-3 minutes, until they are just tender but still have a slight crunch.
- Season with salt and pepper to taste. Remove from heat.
- In a large bowl, toss the sautéed noodles with the homemade pesto until they are well coated.
- Add the halved cherry tomatoes and gently toss to combine.
- Top with additional grated Parmesan cheese and garnish with fresh basil leaves.
