Chorizo & Cherry Tomato Spaghetti

Ingredients
- 200g spaghetti
- 150g chorizo, sliced or diced
- 250g cherry tomatoes, halved
- 3 garlic cloves, thinly sliced
- 1 small red onion, finely chopped
- 2 tbsp olive oil
- fresh basil leaves, roughly torn (optional, for garnish)
- grated Parmesan cheese, for serving
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water.
- In a large pan, heat the olive oil over medium heat. Add the chorizo slices and cook until they start to crisp up and release their oil, about 3 minutes.
- Add the chopped red onion and sliced garlic to the pan with the chorizo. Sauté until the onion is soft and the garlic is fragrant, about 2-3 minutes.
- Add the halved cherry tomatoes to the pan. Season with salt and pepper.
- Cook until the tomatoes begin to soften and release their juices, about 5 minutes. If the mixture is too dry, add a splash of the reserved pasta water.
- Add the cooked spaghetti to the pan and toss to combine with the chorizo and tomato mixture. Add more reserved pasta water, if needed, to create a light sauce that coats the spaghetti.
- Garnish with freshly torn basil leaves and a generous amount of grated Parmesan cheese.
