Chipotle Pulled Pork Tacos

Ingredients

  • 2 cups cooked pulled pork (store-bought or homemade)
  • 1-2 chipotle peppers in adobo sauce
  • 2 tbsp adobo sauce from the chipotle can
  • 1/4 cup tomato sauce or passata
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 8 small corn or flour tortillas
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh coriander, chopped
  • 1/4 cup crumbled feta cheese
  • 2 limes
  • avocado, sliced
  • sliced jalapeños
  • sour cream

Instructions

  1. In a blender or food processor, blend the chipotle peppers, adobo sauce, tomato sauce, smoked paprika, cumin, and garlic powder until smooth.
  2. In a large pan, heat olive oil over medium heat. Add the cooked pulled pork and pour the chipotle sauce over it.
  3. Stir to combine and cook for about 5-7 minutes until the pork is heated through and the sauce has thickened, coating the pork evenly.
  4. Heat tortillas in a dry pan for 30 seconds on each side.
  5. Divide the chipotle pulled pork evenly among the tortillas.
  6. Top with thinly sliced red onions, fresh coriander, and crumbled feta.
  7. Squeeze fresh lime juice over the tacos and serve with extra lime wedges on the side.
