Chilli Crab & Spring Green Noodles

Ingredients
- 250g crab meat
- 200g egg noodles or rice noodles
- 2 spring onions, finely sliced
- 1 red chilli, finely sliced
- 1 tbsp ginger, minced
- 3 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp honey
- 200g spring greens
- 1 tbsp vegetable oil or sesame oil
- fresh coriander
- 1 lime
Instructions
- Boil the noodles according to the package instructions.
- In a small bowl, mix the soy sauce, oyster sauce, fish sauce, lime juice, and honey. Set aside.
- In a large pan or wok, heat the vegetable oil over medium heat. Add the garlic, ginger, and chilli, and sauté for 1-2 minutes until fragrant.
- Toss in the sliced spring greens and stir-fry for 2-3 minutes until they begin to soften.
- Add the crab meat to the pan, stirring gently to heat it through, about 2-3 minutes.
- Add the cooked noodles to the pan, followed by the sauce mixture. Toss everything together until the noodles are evenly coated and heated through, about 2 minutes.
- Sprinkle with spring onions and fresh coriander. Serve with lime wedges on the side.
