Chilli Crab & Spring Green Noodles

Ingredients

  • 250g crab meat
  • 200g egg noodles or rice noodles
  • 2 spring onions, finely sliced
  • 1 red chilli, finely sliced
  • 1 tbsp ginger, minced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 200g spring greens
  • 1 tbsp vegetable oil or sesame oil
  • fresh coriander
  • 1 lime

Instructions

  1. Boil the noodles according to the package instructions.
  2. In a small bowl, mix the soy sauce, oyster sauce, fish sauce, lime juice, and honey. Set aside.
  3. In a large pan or wok, heat the vegetable oil over medium heat. Add the garlic, ginger, and chilli, and sauté for 1-2 minutes until fragrant.
  4. Toss in the sliced spring greens and stir-fry for 2-3 minutes until they begin to soften.
  5. Add the crab meat to the pan, stirring gently to heat it through, about 2-3 minutes.
  6. Add the cooked noodles to the pan, followed by the sauce mixture. Toss everything together until the noodles are evenly coated and heated through, about 2 minutes.
  7. Sprinkle with spring onions and fresh coriander. Serve with lime wedges on the side.
